Open FOG Image file

We are currently researching if FOG can replace our Ghost server. One of the things we do is take backups of machines and burn those backups to DVD. Every now and then we need to move all the ghost files back on to the computer to restore one or two files.
Is there a way to do this with the FOG image?
Could I restore the Image to a virtual machine and then pull out the data I needed?
I can ftp to the FOG server to pull out the image file if needed. -
FOG image files cannot be “opened” due to the way they’re designed, but you can image a VM or test machine and pull the files that way.
