Only posting here really so it may help others, as I have already worked out a workaround.

Was using Fog 1.4.4, trying to restore an image from a 500GB HDD to a 120GB SSD both on a Dell Latitude 3590 (UEFI) Secure Boot disabled, UEFI boot enabled, using Single Disk - Resizable

Image would capture fine but wouldn’t restore to the SSD.

    Tried:
    Restoring to another SSD
Restoring to an older, 250GB HDD
Using another machine to do both of the above on another machine (Dell OptiPlex 3050).

Then updated to 1.5.4 and still no dice with any of the above.

      SOLUTION:
      Shrink the data partition
Move any partitions after the data partition to the left (so unallocated space is all at the right)
Capture using Multiple Partition Image - Single Disk (Non resizable) (or all disks if that’s your setup obviously)
      Deploy to the SSD
Move the previous partitions back to the right.
      Expand the data partition
Recapture with Single Disk - Resizable
      Deploy to the rest.
